Banana Oat Muffins

Preheat oven to 400F.

Whisk together:
190g flour
85g rolled oats
6g baking powder
6g tsp baking soda
3g salt

Beat thoroughly:
1 egg
100g sugar

Beat in:
180g milk
75g olive oil
1/2 tsp vanilla extract
225g mashed bananas

Optionally, mix in:
200g walnut pieces

Fill muffin cups 3/4 full, bake 18­-20 minutes.
