Black Magic Cake

(makes two 9" round cake layers)

Preheat oven to 350°F.

Beat until ribbon-y:
400g sugar
2 eggs

Whisk together, then emulsify into sugar and eggs:
1/2 cup olive oil
1 cup black coffee
1 cup buttermilk

Sift in:
220g flour
95g cocoa
12g baking soda
3g baking powder
5g salt

Stir to combine.

Pour into greased and lined 9” round cake pans and bake for 30-40 minutes.
