Buttermilk Biscuits

makes 12 large biscuits

Preheat oven to 450F.

Whisk together:
500g flour
30g baking powder

Grate cold into dry mix:
170g (1.5 sticks) butter

Add and mix until just combined:
2 cups buttermilk

Turn out onto heavily floured counter.

With hands, flatten dough, cover with flour, then fold and flatten again. Do this a few times to create layers, applying flour liberally.

Cut into round biscuits, gathering and re-flattening dough scraps to cut again to make 12 biscuits in total.

Bake for 15 minutes, until lightly browned.
