Cinnamon Dolce Syrup

(makes 1 bottle - 25 fl oz)

Bring to a boil, only until sugar is fully dissolved:
440g water
500g dark brown sugar
3g ground cinnamon
3g diamond crystal kosher salt

Take off the heat and stir in:
5g clear vanilla extract

Let stand for a minute or two, then skim the scum off the top and bottle.
