Olive oil cake

Preheat oven to 325F

Whisk together:
180g flour
200g sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp kosher salt

Then in a pyrex measuring cup, whisk together:
3/4 cup whole milk -or- 1/2 cup kefir + 1/4 cup water
1/2 cup olive oil
2 eggs
2 tsp citrus peel

Gradually mix wet into dry

Bake 50-60 minutes or until toothpick comes out clean

Cool in pan on rack 20 minutes
