Ruth's birthday cake

Torta di Cioccolato e Mandorle

Preheat oven to 350F.

Melt together in a double boiler:
8oz bittersweet chocolate, broken into pieces
2 sticks butter

In a separate bowl, whisk to ribbon:
6 egg yolks
150g sugar

Add the chocolate mixture, and:
1 tsp vanilla extract
1/4 tsp salt

Add and mix to combine:
244g almond flour

Whip, then fold into chocolate mixture in 3 additions:
6 egg whites

Bake for 35-40 minutes.

Grandma’s Fudge Frosting

Bring to a boil over moderate heat, then simmer 10 minutes:
250g sugar
1 cup heavy cream

Remove from heat and stir in:
6oz bittersweet chocolate
1 stick butter
2 tsp vanilla extract
1/4 tsp salt

Stir thoroughly and refrigerate until thickened.
